Discover Korean Food #33: Dr. Sook-Ja Yoon's "Sogogi Gugija Zim (Steamed Beef with a Chinese Matrimony Vine)"

Sogogi Gugija Zim is a steamed dish in a pot cooked with stirred beefs, Chinese Matrimony vine, Logan, Vegetables and water. Chinese Matrimony Vine is good for the stomach. It helps the function of the spleen. Also, It protects the kidney and prevents knee ache, back ache and constipation.

*Ingredients
300g beef thigh, 1 tbsp fine rice wine, 1/4 tsp salt, 1/8 tsp black pepper powder, 1/2 tbsp Vegetable oil
30g Chinese Matrimony vine, 50g Dioscorea batatas, 2 shiitakes
6 dates, 10 ginkgo nut, 1/2 spring onion, 1 tsp salt, 1 and 1/2 cups water

*Recipe
1. Cut in 3 – 4 cm after removing the blood of the beef. Chop the spring onions.
2. Rinse the Chinese Matrimony vine and the Logan
3. Peel the Dioscorea batatas and cut in 0.7cm. Soak the shitakes for an hour. Take the stem out. Divide them into a half or a quarter.
4. Peel the ginkgo nuts after quick frying.
5. Remove the skins of the dates. Take out the seeds and cut them into four portions.
6. Stir the beefs with the fine rice wine, salt, and black pepper powder.
7. Insert Beefs, Chinese Matrimony vines, Logan, Dioscorea batatas, shitakes, ginkgo nuts, dates, spring onions into a pot. Pour water and season them with salt.
8. Put the pot into a caldron. Boil it again for a half an hour.

Dates
The taste of date is sweet and it keeps the body warm. It is good for robustness, relaxation, and has a diuretic effect. It is also used for Antidotes.
