Discover Korean Food #20: Dr. Sook-Ja Yoon's "Cornelian Cherry Eel Rice"

Cornelian Cherry Eel Rice is a mixed rice dish with grilled eel topped with Cornelian Cherry sauce.
Eel makes Muscles and Bones strong and assists good blood circulation.
Therefore it is especially good for Arthritis.

Ingredients
2 cups of non-waxy Rice, 2.5 cups of Water
2 Eels, 1 tablespoon of Wheat Flour
20 grams of Cornelian Cherries, 1 cup of Water
One 10 grams Lettuce, 1 tablespoon of Vegetable Oil

*Seasoning Sauce:
4 tablespoons of Soy Sauce, 1 tablespoon of Red Pepper Paste, 1 tablespoon of Millet Jelly, 1 tablespoon of Honey, 1 tablespoon of Sake, 1 Dried Red Pepper, 30 grams of Spring Onion, 30 grams of Garlic, 10 grams of Ginger, 3 grams of Black Pepper and half a cup of Brewed Cornelian Cherries.

RECIPE
1. Wash the rice and soak it in water for 30 minutes. Drain the water through a strainer.
2. Put the rice into the pot and heat it for 4 minutes on a high setting. When it boils leave it for 3 minutes on a medium setting. Then, reduce the heat to low and steam for 10 minutes.
3. Rub the eels with Wheat Flour. Remove the bones and cut the backs in half. Steam for 10 minutes.
4. Leave the Cornelian Cherries in water for 3 hours. Then drain the water.
5. Put the Seasoning sauce into the pot and heat it for 2 minutes on a high setting. When it boils leave for 5 minutes on a medium setting. Then, reduce the heat to low and steam it for 8 minutes. Turn the heat off and leave the eel in the pot for 30 minutes.
6. Wash the Lettuce and shred it into 0.5cm strips.
7. Put the vegetable oil onto the gridiron. Brush the eels 2 or 3 times with the seasoning sauce. Grill the eel on the gridiron for 4 minutes. Cut it into 4 cm long strips.
8. Put the rice into a bowl with the lettuce on top. Then place the strips of eel onto the lettuce.

Could you please download a photo of "cornelian cherries", I'm not familiar with them. Also, can they be purchased from the local Asian Markets, or can Bing cherries be substituted?
